Apricot Squares

Ingredients

1 cup water
1 1/2 cups dried apricots
1/2 cup sugar
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup brown sugar
1 cup quick-cooking oats
1/2 cup butter (1 stick)

Preparation

Preheat oven to 350˚ F. In a medium saucepan, simmer apricots in water until tender, about 20 minutes. Stir in sugar and cool to room temperature. While apricots are cooking, combine flour, baking soda, salt and cinnamon. Add brown sugar and oatmeal and mix until combined. Cut in butter until mixture is crumbly (you can use a food processor to cut in the butter to make preparation easier). Pat 2/3 of the flour mixture into the bottom of a 9 x 9 square baking pan. Spread with apricot filling and top with remaining flour mixture. Bake for 25-30 minutes or until topping is bubbly. Cool before cutting.
