Easy Salmon Patties

Serving size: 1 patty

Ingredients

1 (14 3/4 ounce) can salmon, drained
2 beaten eggs
1 small red onion, diced
1/2 teaspoon black pepper
1/2 teaspoon dried parsley flakes
3 tablespoons vegetable oil

Preparation

Remove any bones from salmon. Combine the salmon, eggs, onion, pepper, and parsley flakes in a large bowl and mix. Shape into 4 patties about the size of a deck of cards (3–4 ounces). In a large skillet over medium heat, fry in oil until crisp, about 5 minutes on each side.
