Honeyed Turmeric Tea

Yield: Makes 2 servings
Serving size: 8 ounces

Ingredients

2 cups cold water
1" fresh turmeric root, peeled (or 1 teaspoon ground)
1" fresh ginger root, peeled (or 2 teaspoons ground)
3 slices fresh lemon
2 teaspoons raw honey

Preparation

1. In a small saucepan, heat the water to a boil. Add the turmeric, ginger and lemon. Lower heat to simmer, covered, for 10 minutes.

2. Remove the turmeric, ginger and lemon. If using ground turmeric and ginger, pour the tea through a fine mesh strainer.

3. Pour the tea into mugs, stir in 1 teaspoon of honey and place one lemon slice in each mug.

Note: Fresh turmeric and ginger are highly recommended. Use ground only if fresh is unavailable.
