Lamb Patties

Serving size: 1 patty

Ingredients

2 pounds ground lamb
2 teaspoons dried thyme
2 teaspoons garam masala
1/2 teaspoon sea salt
1 tablespoon extra virgin olive oil
6 Boston lettuce leaves
6 tomato slices

Preparation

  1. Place lamb in a mixing bowl, add thyme, garam masala and sea salt, and mix well by hand. Form into 6 patties.
  1. Pour olive oil into a large skillet and warm on medium heat for 2 minutes. Place the patties in the skillet and cook, uncovered, on medium heat for 8 minutes per side.
  1. Lay a slice of tomato on each lettuce leaf, then top with one lamb patty. Spoon 2 tablespoons olive tapenade (recipe below) on each patty and serve immediately.

Note: Tabouleh is a great side dish for the lamb patties, or serve with raw veggies.
