Spiced Carrot-raisin Muffins with Orange Drizzle

Ingredients
1 tablespoon raw honey
2 tablespoons orange juice
1/2 teaspoon orange zest
2 cups all purpose flour
1 teaspoon sea salt
1 tablespoon baking powder
1 teaspoon ground turmeric
1½ teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/4 cup granulated sugar
1 cup carrots, grated
1/2 cup golden raisins
1/2 cup walnuts, chopped
1 egg, beaten
1 cup unsweetened almond milk
1/4 cup coconut oil, melted
Preparation
- For the orange drizzle: Combine the honey, orange juice and orange zest in
a small bowl, stir well and set aside.
- For the muffins: Preheat oven to 400°F. Spray muffin pan with non-stick spray.
- In a large bowl, stir together the flour, salt, baking powder, turmeric, cinnamon, cloves, allspice and sugar. Add the carrots, raisins and walnuts; stir to mix well. Set aside.
- In a separate bowl, stir together the egg, milk and coconut oil. Pour into the flour mixture and stir gently, just until blended. Do not overmix.
- Fill each muffin cup 3/4 full. Bake at 400°F for 20 minutes. Immediately remove from pan and spoon 1 teaspoon of the orange drizzle over each muffin.Note: If making mini-muffins, bake at 400°F for 15 minutes; yield will be 24 mini-muffins, with a serving size of 2 mini-muffins.
