Tuna Melt

Serving size: 1 open-face sandwich

Ingredients

2 (6.5-ounce) cans white albacore tuna canned in water, drained
1/4 cup reduced-fat mayonnaise
1/4 cup chopped celery
1 tablespoon minced onion
1 tablespoon dried parsley
4 slices 100% whole wheat bread
4 slices very ripe tomato
4 (1-ounce) slices cheddar cheese

Preparation

Combine tuna, mayonnaise, celery, onion, and parsley. Toast bread slightly and spread with tuna mixture. Top with tomato slice and slice of cheese. Preheat broiler and broil for 2–3 minutes or until cheese is melted.
