1. Roast your pumpkin seeds
Enjoy this year’s leftover jack-o’-lantern seeds by roasting them. This is an easy, quick way to make sure those seeds don’t go to waste.
There’s no need to separate the seeds from the pulp because the roasted seeds break off easily. Place the seeds on a parchment-lined cookie sheet and drizzle with extra-virgin olive oil, sea salt, chili pepper, cumin, thyme or red pepper flakes. Bake at 300°F for about 45 minutes, stirring now and then to ensure even browning.
