Banana-Cinnamon French Toast Hearts

Serving size: 2 slices French toast with 2 tablespoons maple syrup and 1/4 sliced banana

Ingredients

2 medium bananas, plus 1 sliced for garnish
4 large eggs
2 tablespoons unsweetened non-dairy milk (almond, coconut, etc.)
1/2 teaspoon pure vanilla extract
2 teaspoons ground cinnamon, plus more for garnish
1/4 teaspoon sea salt
8 slices whole-grain bread
1–2 tablespoons unrefined coconut oil
1/4 cup maple syrup

Preparation

1. In a large mixing bowl, mash 2 of the bananas with a fork. Add the eggs, non-dairy milk, vanilla, cinnamon and salt, and whisk together until fully blended; pour the mixture into a loaf pan.

2. Dip 2 slices of bread at a time into the egg mixture, flipping the bread to thoroughly coat both sides.

3. Over medium heat, melt the coconut oil on a griddle or in a large skillet. Place the dipped bread slices onto the griddle, and cook about 2 minutes on each side, until bottoms are golden brown. While the first slices of bread are cooking, continue dipping the remaining slices and add to the griddle and cook as above. Remove the bread slices as each one is finished cooking to a baking tray until all are cooked.

4. If desired, use heart-shaped cookie cutters to cut the French toast into hearts. Serve with maple syrup, sliced bananas and a dusting of ground cinnamon.
