Cinnamon Fajitas

Mexican-style food can be loaded with fat, calories, and sodium, making a health-conscious diner think twice about eating at a favorite Mexican restaurant. Luckily, making recipes like this one at home cuts down on the bad stuff while still giving you that south-of-the-border flavor you crave.

Ingredients

4 boneless, skinless chicken breasts
2 teaspoons ground cinnamon
Salt and pepper to taste
2 tablespoons vegetable oil
1⁄2 cup chopped onion
1 teaspoon minced garlic
1 large jalapeño pepper, chopped
1⁄4 cup lime juice
8 corn tortillas

Preparation

Preheat oven to 400°F. Season chicken with cinnamon and salt and pepper. Place in baking dish and bake for 30 minutes. Cool and cut into thin slices. Heat oil in a skillet and cook onion and garlic until tender. Mix in chicken, jalapeño, and lime juice. Warm tortillas according to package directions, top tortillas with chicken mixture, and serve.
