Outdoor Grilled BLT

Extra virgin olive oil
4 teaspoons butter at room temperature
8 slices whole grain bread
8 slices bacon
4 tablespoons avocado mayonnaise (Primal Kitchen is a quality brand; available in health-food and most grocery stores)
1 cup spring mix salad
1 cup spring mix salad


1. Position the grilling rack 3–4″ above the heat source and heat the grill to low. Brush the grilling rack with olive oil to prevent sticking.

2. Lightly butter both sides of the bread slices; set aside.

3. Grill the bacon about 4 minutes on each side; move to the side of the grill.

4. Grill the bread slices 1–2 minutes on each side; set aside.

5. To assemble each sandwich: Spread some of the mayonnaise on one slice of the grilled bread, then add some of the spring mix, one tomato slice, and 2 bacon slices. Top with another slice of the grilled bread and cut in half.

Notes: Consider grilling the tomato slices, too. They can be grilled at the same time as the bacon and will take a similar amount of time. Serve with chunks of watermelon mixed with feta or goat cheese crumbles and chopped fresh mint.
