Chicken with Apricot Sauce

Serving size: 1 chicken breast

Ingredients

- 4 boneless, skinless chicken breasts, each about 4 ounces
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 tablespoon olive oil
- 3/4 cup chicken broth
- 1/4 cup minced red onion
- 4 fresh apricots, pitted and chopped into bite-sized pieces
- 3 tablespoons apricot preserves
- 1/2 teaspoon dried rosemary

Preparation

Sprinkle chicken breasts with salt and pepper. Spread flour in a shallow dish such as a pie pan. Dredge chicken in flour. Heat oil in a large, heavy skillet over medium heat. Add chicken and cook until browned and cooked through (5-10 minutes per side, depending on thickness of chicken, or until a meat thermometer inserted into the meat reads 160o). Place chicken on a plate in the oven on warm setting.  Add chicken broth and onion to the pan and cook over medium heat 5-10 minutes to reduce sauce. Add apricots and cook another 3-5 minutes. Stir in apricot preserves and rosemary. Serve sauce over warm chicken.
