Salmon with Cherry Salsa

Cooking time: 10–12 minutes

Yield: 4 servings
Serving size: 1 fillet with 1/4 of salsa

Ingredients

• 3 tablespoons brown sugar
• 1 tablespoon grated orange peel
• 1/2 teaspoon coarsely ground black pepper
• 4 salmon fillets, each about 3 ounces
• 1 ripe mango, seeded, peeled, and chopped
• 1 cup frozen tart cherries, thawed and drained
• 2 tablespoons chopped fresh mint
• 2 teaspoons balsamic vinegar

Preparation

Combine brown sugar, orange peel, and pepper. Rub mixture over fish, cover, and refrigerate up to 8 hours. Preheat oven to 400°F. Bake salmon for 10–12 minutes or until meat flakes easily with a fork. While salmon is cooking, combine mango, cherries, mint, and vinegar. Serve over fish.
