Grilled Pork Kabobs

Preparation time: 10 minutes
Cooking time: 10-12 minutes

Yield: 4 servings
Serving size: 2 skewers


1/4 cup apricot jam
Cayenne pepper to taste
1/4 cup water
4 boneless pork chops, cut into 1-inch pieces
8 whole fresh apricots, pitted and cut in half
1 medium sweet onion, cut into wedges


Cover grill with foil pierced with a fork to allow flame to penetrate foil. Heat grill to medium. Combine jam, cayenne pepper and water to make a sauce. Thread 8 metal or wooden skewers, alternating pork, apricots and onion on each skewer. Grill 10-12 minutes or until pork is cooked through. During cooking, baste with sauce a few times and turn at least once.
